Soframiz: Vibrant Middle Eastern Recipes from Sofra Cafe and Bakery is a cookbook by Ana Sortun and Maura Kilpatrick. The book is divided into sections of breakfast, meze, flatbreads, savory pies, cookies and confections, beverages, pantry items, and desserts, covering selections from feta and dill pogaca, to stuffed simit, to chocolate hazelnut baklava. Not every recipe has an accompanying photograph, but those that do look savory and appetizing. The best-looking items included red dragon iced tea, morning buns with orange blossom glaze, yellow split peas with za’atar spiced almonds, and Sofra’s specialty gingerbread. The authors also include a several-page glossary of essential ingredients, devoting at least a paragraph each to thirty-six Middle Eastern ingredients, such as as bulgur wheat, urfa pepper, and za’atar.
